Two of the oldest and most respected mac news/info sites are Macintouch and TibBITS. Both provide great info on all things Mac. There are ton of other news/rumors sites, but the other one to check out is The Unofficial Apple Weblog (TUAW). They have a nice blog style posting about things new in the Apple/Mac world.
Because you'll have an Intel based mac, you may want to check out OSx86 Project site and forums for Intel related stuff.
Have fun, Apple make and includes some of the best and easiest to use application with its systems. You'll love iMovie and iDVD as well as all the rest.

I wish this was really "my toy." I'm getting it because my job requires that I do work on a Mac, but won't let me have unfettered access to one (I'd have to use one of the servers as a client machine, whilst sitting in the chilly server room). I'm reserving it for a "work-only" resource, so hopefully I can claim it when tax time comes around...
